SELECTION OF FRUIT AND VEGETABLES

Fresh ingredients are the basis of everything.

Our 20 years of experience have allowed us to select the best certified suppliers who are able to consistently guarantee us an exellent fresh product, the starting point for an absolute highquality product.

From here the expert hands of our operators take care of washing,peeling and cutting of fresh fruit and vegetables.

Just now fruit or vegetables are ready to be cooked!

COOKING AND CANDYING

Few ingredients are added to pure fruit: the first two ingredients are brown sugar and organic lemon juice.

Once cooked at 85° for few minutes, the fruit or vegetables used for the production of our mustard are placed in tubs of candying inside which the preserving liquid is progressively concentrated up to a sugar content of about 70° Brix .

This process takes 3 to 5 days and guarantees a gradual candying which preserves the softness and the original taste of the fruit.

NATURAL MUSTARD FLAVORING

At this point the third fundamental ingredient of mustard is added to candied fruit or vegetables: the mustard flavoring .

We use a natural mustard flavoring, of course no chemicals!

This ingredient gives the characteristic spicy taste to our Mostarda and acts as bacteriostatic as well, ensuring product to naturally became by definition “self-preserving”!

PACKAGING

Each vase is manually filled by our operators and bridged with thesugary preserving liquid obtained from candying of fruit or vegetables used in the process.

Packaging has always been done exclusively in recyclable glass jars wich are carefully sealed in order to preserve the taste and the aromasof the product.

LABELING

The last touch is given by our label, that transparentlycommunicates ingredients and shelf life of the product.

All this is strictly followed to be able to “ put nature in jar” and offer you a compliant product with high quality standards .
